What Is This All About Anyway? (Introduction)

  Many years ago a co-worker noticing my "strange" lunches asked me why I chose not to eat meat. This started the process of what you now hold in your hands. Elinor's question made me realize how so many of us fail to really understand diet. Even those of us who have chosen a plant-based cuisine sometimes have no real understanding of all that involves.

  As I set out to better acquaint myself with the reasons, I was overwhelmed by the staggering plethora of information, and the many gracious people more than willing to assist in acquiring the resources necessary for this undertaking. After years of research came the overwhelming assignment of compressing those years of work into just a few short pages. Entire books could be written on each one of the four broad areas addressed here, and many more could be written on the specific topics discussed in brief within those broad categories.

  Let me try to encapsulate further what we will be discovering in the ensuing pages. First, we will look at the Bible to see what it says about diet and our multi-faceted obligations. Second, we will examine our anatomical structure and general health as effected by our choice of diet. Third, we'll discover how most dinners are destroying the environment. And finally, the fourth important area we will consider is the treatment of the animals.

  Please keep in mind that I have no idea of the contents of your cupboards or refrigerator. I do not know your family ties, occupation or hobbies. Herein is the candid presentation of facts as they are. What you will do is up to you, but it is my prayer that you will join with me in making tomorrow brighter than yesterday by how you choose to live today.
